The aroma of chiles simmering with beef, the sizzle of peppers hitting a sauté pan, the sight of vibrantly colored stuffed peppers and freshly fried falafel. As students will attest, some colleges have come a very long way with dining that's safe for food allergies or celiac disease.

On April 7, the Dartmouth Student Government Senate met for its second weekly meeting of the spring term. Led by student body president Jessica Chiriboga '24, the Senate spoke with Dartmouth Dining director Jon Plodzik and associate dean of student affairs Marco Valenzuela, who recommended changes to the Ivy Unlimited dining plan.

This week is Eating Disorder Awareness Week — an annual campaign aimed at educating people about eating disorders and offering support for those affected by them. Dartmouth Dining registered dietician and nutritionist Beth Rosenberger has worked at Dartmouth for over 25 years and helps students with dietary restrictions or food-related health issues navigate the dining halls.

Dartmouth Dining is working with Campus Services to build a serving area in the Class of 1953 Commons that will be certified free of the nine most common food allergens, scheduled for a grand opening this fall term.

On Monday through Friday, Collis Cafe prepares a variety of lunch options, but none seem to be more popular than the Collis Lunch Special. The Special — which changes every day but follows a loose weekly pattern — even has its own dedicated GroupMe chat titled "Collis Special @NOW." The chat has more than 1,400 members, all eager to hear the day's Special option.

Looking around the Class of 1953 Commons this term, not much has changed. Bake My Day still has baked goods, the salad station still has salads and the soup station still has, well, soup. However, upon my arrival to campus, I could not stop hearing about a change to what is perhaps the biggest staple of college dining — chicken nuggets. And after I had the opportunity to try them, I immediately understood what all of the excitement was about.

Starting Jan. 3, the Class of 1953 Commons opened for late-night dining from 9:30 p.m. to 1:30 a.m. seven days a week, according to Dartmouth Student Government president David Millman '23. The Courtyard Cafe — which temporarily opened for weekend late-night dining on Nov. 4 — will reduce its hours, closing at 9:30 p.m. daily to accommodate staffing issues, Dartmouth Dining Services director Jon Plodzik said.

Dartmouth Dining Services reopened late night dining at the Courtyard Cafe on Friday and Saturday until midnight — which they had "historically" done before the pandemic, according to Dartmouth Dining director Jon Plodzik. Freshman year, I used to trek, maskless, from the Choates to Collis almost every night between 9 p.m. and 12 a.m. until I was on a first-name basis with the late night smoothie makers. I discovered that the cheddar and sour cream Ruffles were practically a panacea, curing everything from midterm blues to insomnia. On "on" nights, Collis was the unofficial destination for end-of-night reconnaissance ("Where did you end up?" "Is that glitter?") before Dartmouth's loudest tucked themselves in with mac and cheese bites — the only thing God and Satan have ever agreed upon.

As the eight-day quarantine period for students arriving on campus comes to an end, students will soon be able to access several campus dining locations. Though many of the same dining restrictions from fall term will still apply, Dartmouth Dining will offer a variety of new options, including a halal station and a late night meal service at the Class of 1953 Commons, and may soon be able to accommodate students indoors.

Dartmouth Dining Services has converted the all-purpose student space and event hall, Sarner Underground, into an isolation meal pick-up center for students who have tested positive for COVID-19. Students getting their meals at Sarner swipe themselves in with their Dartmouth ID cards, while dining staffers – adorned in N95 masks and standing behind a plastic glass barrier — serve patrons one at a time.

After a year of irregular and sometimes unpredictable hours, many Dartmouth Dining Services locations will be resuming normal operations this fall.
